Results: In this study, the authors established optimal conditions for the enzymatic hydrolysis of colloidal chitin, derived from shrimp processing waste, to produce N-acetyl glucosamine. They utilized extracellular chitinolytic enzymes produced by a moderate halophilic marine bacterium (strain PRO-III-115) isolated from the Yucatan coast. Through a 33 factorial design evaluating temperature, pH, and buffer molarity, the researchers determined that the highest N-acetyl-D-glucosamine yield (265 μg/mL) was achieved at 60°C, pH 8.9, with a low-concentration Tris buffer and in the presence of 3.5% NaCl.
